Owner and Head Chef Loretta Liu worked alongside Pierre Gagnaire in the Raffles kitchen in Singapore where she was training as a chef. His thinking has inspired her approach to the unique flavours in "facing tomorrow but respectful of yesterday".

Lady Yang was one of the famed four beauties of ancient China, and the Emperor Xuanzong assigned his imperial couriers to deliver her favourite fruit thousands of miles from the south – the Lychee. View the Asian Collection flavoursIt is a signature flavour throughout Asia, found in ice creams, sweets and dessert soups. We love the slighty nutty flecks in the shell, but bite and you’ll find a piece of tangy sweet ginger in a chocolate ganache. A winner.
Lemon grass and chocolate is one of our not-so-sweet macarons, lifted by the citrus flavour of the lemongrass. Subtle and a nod to our South East Asian origins.

Croquembouche are huge pyramids of either profiteroles or macarons, brightly and beautifully decorated to a theme of your choice. The French traditionally make this cake a centrepiece for a wedding (covered in white chocolate and cream) or birthday.

A delicious, light, fluffy cake which is moister than a traditional butter-based cake, as vegetable oil and fruit juice are used to bind the flour, egg and sugar together.
The chiffon cakes are flavoured with our own natural fresh fruit purees and decorated with delicious buttercream.
